Create console.log beforehand to ensure correct permissions.

I also came across roundcube logfiles owned by root. Maybe we should not run update_database as root

The other option would be to run the updatedb.sh command not with root rights but with the rights of roundcube_sysuser. This would ensure the logfiles aren't created as root.
This would apply to the plugins package as well. IMO.
Maybe doing both would be okay as well
